Fresno Pepper

The Fresno pepper is a California original—and a cornerstone in building balanced, flavorful heat.
This variety belongs to the Capsicum annuum species and was developed in Fresno, California by Clarence Brown Hamlin in the 1950s. It was bred as a brighter, more flavorful alternative to the jalapeño—and it delivers.

With a heat range of 2,500 to 10,000 Scoville units, Fresno peppers bring a clean, approachable heat that doesn’t overpower. When fully ripened to red, they develop a slightly sweet, almost smoky flavor with a touch of fruitiness.

Why we use it
Fresnos are one of our go-to base peppers. They help build that first layer of flavor—bringing brightness, body, and a smooth, easy heat that makes a sauce versatile.
They’re the foundation that lets everything else shine.
