Bright, citrusy, and fresh—this one brings a clean top note.

The Lemon Spice Jalapeño is a fresh take on a classic—same familiar jalapeño backbone, but with a bright yellow color and a noticeably different flavor.
This variety is part of the Capsicum annuum species and was developed by New Mexico State University through their Chile Pepper Institute breeding program. It’s an open-pollinated variety, bred to bring more color and a citrus-forward twist to the traditional jalapeño.
With a heat range of 2,500 to 8,000 Scoville units, it stays true to jalapeño-level heat—approachable, balanced, and versatile.
Where it stands out is flavor. Compared to standard green jalapeños, the Lemon Spice variety is brighter, slightly sweeter, and carries a subtle citrus note that really comes alive when fermented.
Why we use it
This pepper brings a clean, vibrant top note to our sauces. It adds brightness and a citrus edge that lifts heavier ingredients and keeps everything tasting fresh.
